Elizabeth “Beth” Thorsteinson, 59, of Wahpeton, ND, passed away Friday, March 19, 2021, at Sanford Medical Center in Fargo, ND. A private family service will be held in the coming days. A Celebration of Beth’s Life will be held at a later date. Arrangements have been entrusted to Vertin-Munson Funeral Home, Wahpeton.
Elizabeth Marie Thorsteinson was born on July 27, 1961, in Fargo to Paul and Mary (Kenney) Jarisch. She was raised in Horace, ND, and graduated from Shanley High School in Fargo in 1980. She furthered her education at North Dakota State College of Science, Wahpeton, in Culinary Arts.
In 1984, Beth met the love of her life Scott Thorsteinson in Wahpeton, and the two were united in marriage on May 4, 1985, at the Newman Center. Together they made their home in Wahpeton and raised four daughters and a son. Beth did in home daycare while Scott worked in Law Enforcement. She also drove bus for Wahpeton Public Schools for 18 years and loved building connections with the families she met.
Beth had an infectious laugh. If Scott lost sight of her, he could often find her by her laugh while she was conversing with others. She was very patient and caring; this was especially evident in her interactions with children, animals, and her volunteer work. Beth had a passion for serving with Meals on Wheels, taught CCD at St. Mary’s in Breckenridge, and was a member of the Wahpeton Lions often bringing Scott along with her.
Being around her grandchildren was the light of her life. She also loved to cook, sew, decorate, and anything she put her mind to, she did it and could do it well. Gardening, fishing, deer hunting, karaoke, you name it! Beth was always open to trying new things.
Beth’s gorgeous eyes and beautiful smile will forever be missed by her loving husband and companion, Scott Thorsteinson; daughters, Kerry Thorsteinson-Koskela, Amanda (Peter Rogness) Thorsteinson, Caroline (Nick) Schwantz, and Rebecca Thosteinson; son, Patrick Thorsteinson; grandchildren, August Stuehrenberg, Branch Schwantz, Amira Holt; mother, Mary Jarisch; siblings, Paul, David, Margaret, Ronald, Ken, Jackie, Ann, and Theresa; and her fur babies.
Preceded in death by her father, Paul Jarisch; and her maternal and paternal grandparents.
